pumpkin chocolate chip cupcakes


{ps. these are perfect way to impress your hot next door neighbor. or your relief society. or, whomever really. point is, they are DANG good.} ;)





Suuuuper yummy pumpkinny chocolaty cupcakes with frosting of course!

ingredients: 

1 pkg, yellow cake mix
1 pkg, vinalla pudding mix
1 Cup. canned pumpkin
1/2 Cup. of water
1/3 Cup. oil
3 eggs
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1 Cup. semisweet chocolate chip (mini ones work great!)

Heat oven to 350 degrees, line 24 muffin cups with paper baking cups. 
In a large bowl mix together all the ingredients except for the chocolate chips.
beat at low speed until moistened.
Beat 2 minutes on high speed.
fold in chocolate chips.
fill cups 1/3 full
bake for 15-20 minutes.


and, boom! you got yourself a delicious cupcake.

but hey, whats a cupcake without cream cheese frosting? 

{don't worry, i was sure to find the best, easiest, cheapest one on the web!}

2 (8 ounces) packages of cream cheese, softened
1/2 Cup. butter, softened
2 Cups. sifted confectioners' sugar
1 tsp. Vanilla extract

In a medium bowl, cream together cream cheese and frosting until creamy.
Mix in the vanilla and gradually stir in the powederd sugar.
store in fridge after use.

aaaaand seriously, that's it. 
and its soooooooo good!

{warning, these seems to make tons of frosting. btw. I frosted 24 cupcakes, and still had half the batch left!}

oh! and for kicks, giggles, and cuteness i sprinkled a little cinnamon on top. Mmm!
